Thomas Marti, a nature lover, trained landscape gardener, and social worker, has been a part-time beekeeper for 22 years. Together with his two adult sons, he manages around 50 bee colonies and runs his own beeswax processing facility in accordance with BioSuisse guidelines.
The bees overwinter near his home in Meltingen, and in the spring he migrates with them to Laufen in the canton of Basel-Landschaft, then in the summer to Münchenstein in the canton of Basel-Landschaft and Nunningen in the canton of Solothurn, as well as into the mountains, where he harvests alpine rose and (when possible) heather honey in the Uri region at 1,800 meters above sea level. This results in regional and varietal honeys produced in small batches, which are lovingly stirred, bottled by hand, and labeled.
Our forest honey comes from the municipality of Nunningen in the canton of Solothurn, located at an altitude of over 600 meters. The region's dense forests are home to both deciduous and coniferous trees, and Thomas Marti's deep, dark honey exhibits a delightful variety of aromas derived from the honeydew of both tree species.
Unlike the pure pine forest honeys, for example from Entlebuch, the honeydew sources of the deciduous trees provide additional flavor nuances, which makes this honey particularly interesting.
Origin: Solothurn, Switzerland.
Aromas: An exciting interplay of leaf and conifer honeydew. Mild, full-bodied silver fir nuances harmonize with intense, powerful, and slightly bitter aromas.
