Garam Masala is one of the Indian classics. In Hindi, garam means "hot" and masala means "spice". Garam does not mean the spiciness of the mixture, but the intensity of the spices and the "hot" effect they have on the body, especially on the metabolism, and for which Garam Masala is valued in Ayurvedic cuisine. The spices used to make a garam masala vary by region and can vary greatly in India.
Cumin, coriander, ginger, pepper and fennel seeds are the basic ingredients of our Garam Masala. They are complemented by mace, cinnamon and cardamom, giving the blend its rounded smoothness. Since Indian cuisine has a significant influence on the cuisine of the islands of La Réunion and Mauritius, the garam is also available as a massalé on La Réunion and as a massala on Mauritius.
