For the forest or honeydew honey, the bees do not collect the nectar from flowers, but the sweet coating on the leaves and needles of the forest. The availability of this type of honey is highly dependent on the weather; for example, the fir forest honey is not available every year. Forest honeys are characterized, among other things, by a high mineral content.
