For Indians, a meal without chili is like a summer without sun. Our Birdseye chillies are grown in the highlands of southern India with lots of sun. They contain a lot of capsaicin, so they are extremely hot and yet slightly fruity.
The chillies are harvested red and ripe and then carefully dried. Chili is indispensable in Asian and Latin American cuisine and forms the basis of a wide variety of sauces and pastes. Chili is one of the most consumed spices in the world. It brings southern joie de vivre and intensity to the dishes and not only gives them another dimension of taste, but also intensifies the aroma of all foods to which it is added. Our chili is very intense and should be consumed with caution at the beginning. Once you get used to it, you don't want to be without it.
