It was and still is a co-production of the Landhotel Hirschen in Erlinsbach/Aarau and the Fuschina da Guarda in the Lower Engadine (hence the Hirsch stamp on the knife). Albi Von Felten vom Hirschen launched the idea. It is designed and manufactured in Thomas Lampert's forge workshop in Guarda. Blade length approx. 7 cm. All the other forms that result from the specific uses of the various knives have developed from the AlpSbrinz knife.
